Deleting multiple emails
I want to be able to “select all” when I want to empty spam or bin folders.

Assuming that you are using iPadOS14...
From the Mail sidebar, at top-right, tap Edit - and then at top-left tap Select All. Finally, at bottom-right of the Mail sidebar, tap Delete.
