Apple Watch distance

My watch & treadmill were off by almost 1/4 mile so I did a reset fitness calibration & did a 2 mile outdoor run. Then I did “5” miles according to my watch which was hundredths shy of 6 miles. how can something be off by so much & why can’t we edit the distance?
