Keyboard Help? Missing standard punctuation in mail & messages on iPhone

Suddenly my mail App on iPhone X has a keyboard that doesn't include Standard Punctuation?! EX: parentheses ( ), colon, Semi colin etc.

I have checked they keyboard settings multiple times. Checked Accessibility, font size etc.

I didn't change any settings (until trying to find a fix). Settings are back to 'normal' now. Most perplexing is the issue seems ONLY to be in the Apple Mail & messages program. Keyboard in messages, using Safari, ical, and any other apps I tested, ALL have the keyboard I'm used to.

Anything I look up, says to go to keyboard settings etc. I've done all of that.

*Of Note: the keyboard I don't want (prefer punctuation has the @ symbol)

This seems to be since I updated to IOS 14.4.2 (or close to).

*I'm using my MacBook now, which is why I can use Parentheses!
