How do I change my email address for ICloud on my phone?

You want to change the AppleID primary email you use to login to iCloud? If so, see -> Change your Apple ID - Apple Support
If you mean you want to edit your “name@icloud.com” address, you cannot do so. You can use an alias though -> Use email aliases on iCloud.com - Apple Support
