Also worth verifying you have made changes to system Preferences>Keyboard>Text make changes and come back to your preferred setting

This is correct. The only fix is to replace the keyboard. What is happening is that you are suffering from double-spaces. This is a common problem with recent MacBook Pros. Combined with the setting that leroydouglas shows, this is what generates those extra periods. Until you get the keyboard fixed, your only choice is extra spaces or extra periods.
