I am looking to buy the iPhone 12 in full. However, If I buy a iPhone via monthly instalments will I be able to upgrade if a new phone comes out?

You have three options for purchase.
If you pay in full, you can trade the phone for the next model without issue.
If you buy on a monthly installment plan, you'll have finish paying off the phone before you can trade.
