My family is interested in the Family Apple Music plan, but two of us share the same Apple ID on our phones. If we have the family plan, will both of us who share the one Apple ID be able to use it as the same time, or will it kick one of us off?

It will only let one of you play it at the same time, even with a family subscription. The family subscription lets up to 6 different Apple IDs use it at one time, not let 2 or more with the same ID use it at the same time.
Create a new Apple ID for the other user.
