The Messages app cannot be deleted completely from your iPhone. You are using iOS 14 and therefore you have the App Library and that is where you can find the Messages app.
From your Home Screen, keep SWIPING LEFT until you reach the last home screen which is the APP LIBRARY. Locate the Messages app in the App Library and then TOUCH and DRAG it out of there an on to your favorite home screen.
