2560 x 1440 Apple displays and the new Mac Pro.
I have two 2560 x 1440 Apple displays (a Apple LED Cinema Display and a
Apple Thunderbolt Display) and I want to know if they can be used with the new Mac Pro.

I'm using the 2011 Apple Thunderbolt Display with a 2020 iMac Pro and a 2019 Mac Pro. No issues. You'll need the Apple dongle though that Grant mentions.

sure.
The Thunderbolt Display is supported by the Apple ThunderBolt-3 <-> ThunderBolt-2 adapter, plus a genuine ThunderBolt-2 cable.
NO Other display protocols are available from that adapter.
LED Cinema Display should work on a simple Mini DisplayPort cable plugged into a ThunderBolt-2 port on the 2013 Mac Pro.
