How to pair iWatch to factory reset iPhone

I have done factory reset on the iPhone which was paired with the iWatch. After factory reset I realized that my iWatch is not connected to iPhone but it is working in silos without any issue. Now it has been almost a month that my iPhone is not syncing iWatch. I am really very active on fitness and capturing that in the iWatch every single day and do not want to lose that info. Kindly let me know if there a way to backup iWatch which is not paired currently with iPhone and how to reconnect iWatch with iPhone?

let me put my query very specific. I have done the factory reset on my iPhone recently and now iWatch is not syncing any data with iPhone. When i open Watch app on iPhone, it says Pair iWatch. Yes i can do that by erasing current iWatch but what happens to my data that is recorded on iPhone for past few weeks i.e. the point after iPhone was factory reset. Is it auto backing up to cloud or will i lose all those data?

I am following your steps mentioned earlier (pasted below for easy reference). When i click on Find Iphone, then All Devices, i do not see Apple Watch. I see all other devices like iPad, Air Pods, etc. but not the Watch. Could you help me on what needs to be done next?

To unpair and erase watch and remove Activation Lock.

On a computer, go to iCloud.com and sign in with your Apple ID.

Go to Find Iphone.

Select All Devices, then click your Apple Watch.

Click Erase Apple Watch.

Select Next until the device is erased.

Click the remove button next to your Apple Watch.

Then go here;

When you unpair your watch a backup of your health and fitness data is made and uploaded to icloud,when you come to re-pair your watch you are asked if you want to set it it up as new or restore it from a backup,you choose restore from backup then all your health and fitness data is downloaded back to the phone from the icloud backup and you carry on using your watch with all previous data intact.
