It’s stuck in pairing mode so I can’t do that.

Update from the watch itself.
Place the watch on the charger.
Make sure that your watch is connected to wifi.
On your watch, open the Settings app.
Tap General > Software Update.
Tap Install if a software update is available, then follow the onscreen instructions.

I would let the Apple Watch update but the iPhone keeps stopping the update. How do I get the Apple Watch to update to pair I even tried restarting it doesn’t work it reverts to doing the same thing? I also tried skipping doesn’t work either.
