Erase request and my privacy - will everything be deleted

I "lost" my iPhone 7 (Now replaced with an SE all downloaded). I'm reasonably sure who has it. It was switched off almost immediately. I have commenced an "erase request" and this is still "pending". Some of the Apps were not signed out. Ring door camera, Mail and a couple of minor Apps. Will the erase request delete these Apps please when the phone is next comnnected to the internet. Is there anything else I should do to guarrantee my privacy? I have contacted o2 and my old number has been ported to my new phone. Thanks for your help.
