sensor readings unavailable

Not all of my workout options are reading my heart rate and calories like they were a week ago. For instance my strength training workout is now giving me this message “in this type of work out, you earn the calorie equivalent of a brisk walk anytime sensor readings are unavailable.“ If I use “other work out“ I get the same message. Why was it tracking my calories and heart rate in these workouts before but they are not now?

In the Watch app on your iphone, for Music, you can turn off Recent Music and then swipe left and Delete any playlists & albums that you might have listed in there.

With Photo syncing, tap on Selected Photo Album > None.

However, it is well possible that this is not enough for being able to upload watchOS on S3, especially if you have the GPS only version. In that case the better option is to unpair watch from iphone, then pair again. This will allow the update to fit in, while keeping all your apps and data (including photos and music) intact.
