I don't remember the passcode to my Apple Watch and its not paired with my new phone nor my old phone

how do I reset my passcode to my Apple Watch if it disconnected from both of my iPhones ?

i forgot the passcode, i am following the reset instructions and it doesn't want to cooperate. I recently changed the passcode on my apple watch and I forgot it. I got a new phone and I am trying to pair the new phone w/ my watch. How do I reset the watch and pair it to my new phone?
