It's time to replace my 2012 MacBook Pro, which, among other things, is the heart of my music system. If I buy an M1 Mini or Macbook pro, will it work with the Airport Express units that I use to share music throughout the house?

FWIW, I have a M1 MacBook Air and I can verify that it can successfully stream to my 2nd gen 802.11n AirPort Express base station via AirPlay. It should for you; however, no one can 100% guarantee that for your exact situation/setup. Also, note that some folks have experienced issues with AirPlay Mirroring to their HDTVs ... which is a sightly different implementation of AirPlay.

My son, who has a new MacBook Pro, reports that the Mac works fine with an 8 year old AirPort Express. He did mention though that the AirPort Express did not initially appear when he connected the MacBook Pro to the network, but a power off and restart of the Express and a restart of the Mac solved that initial issue.
So, things should work for you as well.
But......as you know, "should" is not the same word as "will".
