even though I’m on Wifi and on a Microsoft Teams call, I’ve noticed my iMessage switches to text message on my iPhone 12 Mini when on a teams call using AirPods. I would have through I could still use iMessage.

Is whoever you are texting to an iPhone user? iMessage is iOS to iOS. If the person you are texting with is Android, it will go as a text message (SMS).
Yes and as soon as I hang up the call, it switches straight back to iMessage.
I don't use MS Teams. Are you texting from within Teams? If you are, you're not using iMessage to begin with. If you're leaving Teams and using the Message App, you are using iMessage.
