Why does it taking so much time for UPDATE REQUEST ?
it is taking too much time for the UPDATE REQUEST.

Try force restart the iPhone by pressing volume up +, volume down - and then hold power button until you see Apple logo again. After that try to update once more.
You can also use Finder/iTunes for the job, simply connect the iPhone on your Mac/PC and check for updated using the apps mentioned above.
