Which OS is best for a mid-2012 MacBook Pro?

The mid 2012 is a really work horse. The last of the fully user upgradable components to make it fly like a new machine.

You are quite capable of running macOS Catalina 10.15.7 without issue.

With only 4GB RAM, I would keep the things as such, IMHO.
