Google is a search engine. You can change which search engine you want to use by doing so in Safari's preferences. Simply select another one in the selections offered under the Search drop down menu. As to the other questions, accessing Facebook is simply a matter of saving it to your Bookmarks. Your question about email is unclear. What specifically is your question? If you want to use Safari to access your email provider's web site, then the same answer applies.
