In Mail, go to Preferences > Fonts and set the Message Font to what you want. (This will not affect what is seen by recipients)

Open System Preferences ➔ Displays ➔ Display Tab ➔ Resolution: Here, Choose Scaled. Here, you will see different available Text size options to you. Pick one that you like.

Which fonts are you referring to? If you mean the OS fonts you can adjust the resolution in preferences and/or adjust accessibility settings (contrast, etc.). You cannot make any other changes.
