Epson has not updated the Scan 2 product for Big Sur compatibility. The last version was released in early Oct 2020 (for Catalina) well outside of any Big Sur beta, or released software testing. They did release a Jan 2021 v5.8.9 ICA driver for Apple's Image Capture.
The paid (free trial) of VueScan Professional can drive this scanner without the need for any installed Epson software or drivers. Even Epson recommends this product.

I use VueScan Professional myself, which I purchased in 2010 for what was then, an unsupported Canon scanner. I have never paid VueScan any money since, and the current version of VueScan still allows me to use that scanner with an M1 mini running macOS 11.3.1.
Sounds good that you only have to pay once. Its a shame that a big company as Epson dont update their drivers. I was in contact with support here in Norway and I can say without doubt that the mail correspondance with Epson is the most tragic I ever experienced. Sounded like they had no clue what they were talking about.
The issue is not limited to Epson, and it likely explains why the VueScan vendor has grown to support 6600+ scanners over time. From a VueScan supported scanner perspective, it simply means vendor independence.
VueScan got their start supporting the first, and then eventually, all of the Nikon scanner product family.
With a printer that old you might encounter the problem I did on my Canon all in one that used a 32bit installer.
On the older Macs where I installed the software on MacOS versions that still supported 32bit the printer & Scan software continued to work perfectly even after upgrading beyond Catalina but on newer Macs that was not an option & as I had to reinstall from scratch my last Mac with functional drivers after a disk failure I had to junk a perfectly functional printer/scanner because Canon never came out with an updated installer for this "obsolete" product.
That was what happened to me some days ago, when upgraded to Big Sur. I had no other choice than order a new laserprinter from HP. Too bad, since the Canon LBP2900 has served me perfect in over 10 years Every
time when upgrading, there had been a patch that worked, but not this time.
I downloaded Vuescan and there was no problem at all to install it and make it work!
