Big Sur? Yes or No to upgrading?
I'm happily on Catalina 10.15.7 on a 2019 Macbook Pro . Should I "upgrade" to Big Sur 11.3.1. or leave well enough alone for now? Thoughts?

If Applications you are using are compatible, go for it after backing up your computer.
In my opinion, I don't have any issue with macOS Big Sur after installing it on MBP 16 inch/2019

If all your programs/ plugins are 64bit then yes
