Is it a proper Wi-Fi and what kind of speeds are you seeing with it in general? Try the Ookla speedtest for instance.
Which series do you have by the way? With the S3 the download seems to take longer...maybe slower disk or something.

Some Wi-Fi networks can be notoriously slow for bigger downloads, maybe that is the reason. I recall experiencing similar troubles, for instance when pulling HD movies over open infrastructure. That update is about 2.6Gb after all so if connections are throttled it can sure take a while.
Right you are, 7.4.1 is smaller than 7.4.0. Is the download still going on? Another possibility is to install the update from the watch directly. You may want to try that too if that download never completed.
I am having this same problem and have for the last few updates. I have to completely reset the watch before I can update and now its showing over 12-19 hours in range to download 7.4.1. Mine is a series 3. This is very frustrating.
My network connection is 60-80Mbps (ookla, fast.com) tested from my iPhone and yet it's taking over an hour so far. It's a 608 MB download. This is absurd. 0 packet loss. It should take about 80 seconds if Apple was able to send it at line speeds. It's not like the update just came out. Grr! I'm on the phone with apple support for other reasons, so they're seeing it too...
