It depends if you are wanting to activate lost mode or not. If you are just generally wanting to change the phone number attached to it, change your phone number in your Apple ID information.
if you would like to change the lost mode phone number just turn off lost mode if it is on right now and press activate lost mode then follow the on screen instructions, you will see that you will have the option to put any phone number you would like.
