Apple watch

I was given a used Apple Watch and I don’t know how to disconnect their Apple ID to put my information in. How do I do that?

You can't. Activation Lock is an anti-theft feature that cannot be bypassed. Only the previous owner can remove the lock with their Apple ID & password. If the previous owner cannot or will not remove the lock, then the watch is useless to you or anyone else. Since it was given to you return it or dispose of the watch properly.
