If i use a 1920x1080 monitor instead of a 4k monitor for the M1 Mac Mini, will it display properly?

Yes most any monitor will work with the Mac Mini.

If the monitor does not have HDMI or USB-C input, then you will need an HDMI or USB-C to DVI or VGA adapter.

Doubt it. This line of Mac mini’s has terrible issue with displays, Bluetooth, Wi-Fi, etc.

Its a brick.

Avoid.
