How do add my Apple Card finance/budget tracking apps like quick books, mint, NerdWallet etc? I can’t seem to find Apple Card listed and when I select Goldman Sachs it asks for me for login credentials that I don’t have.

You can't. That is not a feature that is offered.
You must have Apple Card account using your Apple ID.
