email accounts were deleted after downloading Big Sur

FWIW, I have upgraded multiple Macs with macOS Big Sur and not come across this issue with any of them.

Did you upgrade from a previous version or do a fresh install? Did you restore using Migration Assistant? Which exact Mac model do you have and what version of macOS was it running?
