How do I turn App Libray off?

I don’t want it “hiding apps”

Sorry, you cannot turn if off. The only thing I would recommend is to modify your settings such that new downloads do not go in the App Library. Open Settings, tap Home Screen and select "Add to Home Screen". This way, your new downloads won't be hiding in the App Library.
