Can I reset my old iPhone 10 settings to clear my phone, and NOT have this affect my new iPhone 12?

First; sign out from your icloud account on your old device, so there will be no connection between old iphone and your account/new iphone.

Then what you are about to do is only gonna affect the device itself.
