You can use vol up or vol down to take photos. Not the mute switch.

one more related? Question I have is: when I’m watching a video and want to stop it, it appears that I can’t do it with the earphones because that always triggers music to play. How do I stop that from being the default?

Always close the Music app (slide the screen halfway up then slide Music app upwards) before watching the video and it should not happen.
