Can I back up my father's Ipad to the same computer that I have my itunes library as well as my own Ipad stored

The same way you backed up yours, iTunes (if on a PC) will know that it is a different device. You can name the backup accordingly. If on a Mac using Big Sur, Finder will do the same.

Yes. But you should not or cannot copy your iTunes library to his. Keep both separate and you will not have a problem.
