In notes the text annoyingly wraps at any character in the text when there is no more horizontal space instead of at a word. But weirdly it only happens for some lines. How do I fix this?
I'm using macOS Catalina (10.15.7)

Is the text, in question, being typed into the Note. ? Is Copy and Paste from another Word Processing Application ? If the second of the two, the formatting from the Word Processing Application might be carried over to Notes.
While in Notes >> Preferences and look for Slider to make the Text Larger or Smaller
I tried it, but it doesn't change anything about how the text gets wrapped :(
