Apple watch un-paired after failing to update and now cannot re-pair with phone

I've been using my apple watch series 3 for 2 years with no problems. I noticed one day my watch wasn't receiving text messages, I went to the app on my iphone 11 and I tried to update. I got an error message saying it was unable to update and then it unpaired my watch with my phone and reset my watch. I've been trying since to re-pair with my phone without any success and keep getting the same error message. It completely deleted the watch even from my iCloud and I have no access to using the watch at all.
