Avatar skin colour

Can someone explain what is happening to my avatar? It looks fine when I edit it, but the skin colour always reverts to this when I try to use them.

As you can see, some are fine, some aren't.

Thank you for using the Apple Support Communities. It sounds like you are having problems with Memoji on your iPhone and we are happy to help! First, follow the steps in the Apple Support article titled Use Memoji on your iPhone or iPad Pro to learn how you can create and edit Memoji’s. If you followed the steps from the Use Memoji on your iPhone or iPad Pro Apple Support article, then make sure that the software on your iPhone has been updated to the latest supported version iOS 14.5.1. If your iPhone has not yet been updated to iOS 14.5.1 make sure to back up your iPhone first before updating it.
