There are many printers that still support OS X El Capitan 10.11. For any printer of interest, begin by carefully studying the specifications and/or the manufacturer's web (support/drivers) pages. You should then find information about compatible operating systems.

Another way would be to have a look at the list in About AirPrint - Apple Support. An AirPrint-enabled printer would work with Mac OS X 10.7 Lion or higher, without the need for special drivers, when connected to a network. Drivers/software from the printer manufacturer may or may not add functionality (may require a newer operating system version, so check the specifications).
