How do I change the units of measurement/value for health data imported from provider sites into the Health Records section? All the units are showing as metric, despite the original data being listed in imperial and all my settings set to imperial.

Thanks for coming to Apple Support Communities for help today. It sounds like data from provider sites is coming in as metric even though your iPhone is set up for imperial measurements.
This would be expected depending on where your region is set in iPhone > Settings > Region. It would default to the preferred units of that region.
