To confirm, it sounds like your Apple TV is connected to your TV, and then the Sonos speaker is also connected to your TV via HDMI using an HDMI port that is compatible with eARC. Is this correct? It's important to ensure that your Sonos speaker isn't connected to an HDMI port that only supports ARC, as this will not support Dolby Atmos pass-through.
When you mentioned that you are able to play audio in Dolby Atmos from other streaming services, did you mean that you're using services built-into the TV itself? Or are you using another third-party streaming device that passes through the TV to your Sonos speaker?
Have you enabled Dolby Atmos in the Settings of your Apple TV? If not, refer to the instructions in this guide, under the section titled, "Check if Dolby Atmos is set up":
