Big Sur 11.2 or later supports Canon R5 and R6 raw .cr3. (I still use the old 32-bit Lightroom 6.14 while booted in Mojave so I have to convert .cr3 to .dng with Adobe DNG Converter because that old Lightroom does not support the the new .cr3).
Macs don't run iOS. They run Mac OS.

says that the Canon EOS R is supported. Is it possible with the camera to save as an older R format?
It is possible that the latest Mac OS doesn't yet support the current camera's RAW.
You may have to contact Canon to see if they have a method to make it work.
Can you describe your workflow and tell us what you do and don't see?
Have you tried putting the camera's memory card in the card slot and downloading the files manually and then into the Adobe environment?
