Finder menu > QuickTime Player > File > Open Recent > Clear Menu.
mine is greyed out because i just cleared it to ensure that's how it still works. :)
Finder menu > QuickTime Player > File > Open Recent > Clear Menu.

I've solved it by opening the app, then closed it and then opening and playing a mp4 file. This cleared the history down in the dock.
Thank you all for your suggestions and assistance.
Restart QuickTime Player as well (Quit, then open again), after clearing the menu as mentioned above, to force the Dock to update the recent items list as well.
If that doesn’t do it, you may try to restart the Dock as well. You can restart the Mac to restart the Dock, or you can restart the Finder to also restart the Dock, or restart just the Dock from Terminal.
Thanks, but this doesn't clear them. I click open the QuickTime icon in the dock but they are still there. They are music tracks.
Still there...
and thank you for coming back and sharing your solution. :)
Thanks to jeffreythefrog and Urquhart1244 :)
