On the watch. I bought a new watch on Wednesday with the multicolour pride strap. The strap box (shown above) has got a different cover picture you can put on your watch. I must be being thick because it can’t be this difficult to do?

It was in the latest update,if it's a new watch you may need to update it to see that watch face.
Follow the steps here to update your watch;
Do you mean on the watch or as a photo?.
As a watch face.
Open the watch app on your phone
Tap on face gallery at the bottom
The pride watch face is at the top in new.
Tap on which one you want then tap "add" under the watch face name.
