My iPad needs to be connected to a MAC with iTunes, however with BigSur I do not have iTunes. What should I do?

You do it with the Finder like I do with syncing audiobooks to my iPhone:
An iPad connected to its power supply can perform an update of iPadOS via WI-Fi without being connected to any Mac.
In Catalina and later one use finder rather than itunes
