I bought an Apple Watch SE on the 24th of December but would like to exchange it for a series 6 but due to the lockdown I have not been able to return or exchange it. I went into the shops on Sunday and was asked to contact support to do the exchange.

I don't believe Apple is accepting trade ins of the Watch SE yet. Sell it yourself and use those funds and additional monies to purchase the watch you want.
