Why does my contact name change on my old iPhone now currently owned by my mom even if her Apple ID has been changed. My old contacts are on her phone and she tried changing my dads contact to another nickname and it changed on my phone. Why is this?

Welcome to Apple Support Communities.
If you are having some trouble with the contacts being synced when you dont want them to, it probably means your old iPhone still has a contacts account set up in settings that needs to be removed.
Make sure you go into Settings - Contacts - Accounts - Remove all your accounts so that they don't mix with your mom's contacts.
