What if my ex and I get into a fight and he decides to break my iPhone XR in half, literally and I'm trying to get insurance to replace it? They're asking me for my IMEI or my serial number and when I try to find it nothing comes up because my iPhone is SHATTERED

You're out of luck here. No one is going to insure an already broken phone. It's like buying a car without insurance and then trying to get insurance after you have an accident. Not going to happen.
