You can:

Save them using these instructions:--> Archive or make copies of the information you store in iCloud - Apple Support

When your info are safely stored on your computer, you can delete whatever you want.

or

you can buy extra storage for your iCloud:--> Upgrade your iCloud storage plan - Apple Support
