After updating the system software on my Apple Watch, I had to pair it again to my iPhone and the app asks for my AppleID but when I enter my password I get an error message: Unable to sign in because of a problem communicating with iCloud

Quite a battle, we are running soon out of ideas here! You could try if hard resetting your iPhone could help:
Force restart iPhone - Apple Support
Then you could also check if your watch is still showing up on icloud.com. If it is, erase it there before trying to pair again.

I finally managed to fix it. I removed the Apple Watch from iCloud and erased all old versions of the Apple Watch from the app on my iPhone and then paired the Apple Watch again. It works!!
On your iPhone, are you connected to iCloud with that same Apple ID and password. Under Settings > Apple ID ?
Is that working if you sign into icloud.com as well?
Yes, same Apple ID and the password works on iPhone and on the computer
Try turning off iMessage on your iPhone, under Settings > Messaging. That has helped other people with the same problem in the past.
I tried that but it still doesn’t work. Maybe if I turn it off before pairing the Apple Watch with the iPhone?
Yes try that one too, restarting both devices after that change. It is not certain that this will fix your issue, but let's try this first.
