Many reputable sites, e.g., The New York Times, send emails with ads embedded inside them. These aren't spam messages; I want to get them. I have an ad blocker for Safari (Wipr), but it doesn't block ads in Mail.
Is there a way to block ads within legitimate emails in the Mail application (desktop and iPhone)?

A long time ago, NYT used to offer the option of getting newsletters in text format rather than HTML. Check their email options to see if they still do. That would cut down on the ads.
Use an email client that has the option to only display emails in text format. Or use an email client that has the option to not automatically download images.
I thought that was the only option for Mail but it's been so long since I've used it that I wasn't sure. Thanks.
FWIW, there is an ad blocker called AdGuard that supposedly block ads with multiple browsers and Mail. I've never tried it.
