If you don't have an Add Contact button, it is probably because one or more of the group members is not using an Apple device and not on iMessage. You can only add/remove contacts on fully iMessage group.
If there is anybody in the group with green text bubbles, they are using SMS, not iMessage.
For clarification, the app is called Messages. The chat service is called iMessage. People without an Apple device use Short Message Service/Multimedia Messaging Service (SMS/MMS). The iPhone receives both and can combine the two, but most features are limited to what the SMS/MMS service provides, not the full iMessage service.
