Can’t pair watch with new phone old phone destroyed by water damage

How do I unpair my apple phone when my old phone was destroyed by water damage. I have tried to reset the watch but it only has the time with a lightening symbol beside it. I removed the Apple Watch app from my phone and reinstalled the app no change.
